Veggie Omelet

Ingredients:
  1. Onion - 1/4 cup thinly sliced
  2. Tomato - 1/4 cup finely chopped
  3. Mushroom - 1/4 cup sliced
  4. Capsicum - 1/8 cup thinly sliced
  5. Spinach - 1/4 cup finely chopped
  6. Lettuce - 1/4 cup finely chopped 
  7. Carrot - 1/4 cup thinly sliced
  8. Scallion - 1/8 cup finely chopped
  9. Egg - 1
  10. Heavy Cream (or) Milk - 1 tbsp
  11. Salt - to taste
  12. Pepper - 1/2 tsp
  13. Parmesan Cheese - 1 tbsp
  14. Olive Oil - 1 tbsp
Method:
  1. In a saute pan heat oil, add onion, fry until soften .
  2. Then add tomato ,and all vegetables, salt and pepper  fry until tender.
  3. In a small bowl add heavy cream or milk and add egg, beat well.
  4. In another pan pour beaten egg  and cook one minute on each side it should yellow, don't brown it.
  5. In a plate place the egg and in middle add the cooked veggies,and add Parmesan cheese and roll it.
  6.  Sever hot veggie omelet sprinkled with scallion.
