Veggie Omelet

Preparation Time - 20 min
Ingredients:
- Onion - 1/4 cup thinly sliced
- Tomato - 1/4 cup finely chopped
- Mushroom - 1/4 cup sliced
- Capsicum - 1/8 cup thinly sliced
- Spinach - 1/4 cup finely chopped
- Lettuce - 1/4 cup finely chopped
- Carrot - 1/4 cup thinly sliced
- Scallion - 1/8 cup finely chopped
- Egg - 1
- Heavy Cream (or) Milk - 1 tbsp
- Salt - to taste
- Pepper - 1/2 tsp
- Parmesan Cheese - 1 tbsp
- Olive Oil - 1 tbsp
- In a saute pan heat oil, add onion, fry until soften .
- Then add tomato ,and all vegetables, salt and pepper fry until tender.
- In a small bowl add heavy cream or milk and add egg, beat well.
- In another pan pour beaten egg and cook one minute on each side it should yellow, don't brown it.
- In a plate place the egg and in middle add the cooked veggies,and add Parmesan cheese and roll it.
- Sever hot veggie omelet sprinkled with scallion.
